Lately I’ve been reflecting on the past, remembering the original kitchen that was here at IFS when I started. I began my journey here in the second year of the college – we started with approximately 180 students and finished with close to 240.
I’m thankful for the kitchen upgrades as it would not be possible to do what we do today without them. I remember working in a kitchen space that was about a third of the size of what we have now on two domestic ovens, with no cool room, a handwritten blackboard and a serving bench that could hold about seven plates at a time, but we still managed to get the job done well.
I enjoy reflecting as it brings back feelings and emotions of days past. Even though sometimes those feelings can be painful, without the good and the bad how could we progress?
I have some old and new photos to bring back the memories and to show others how much we have grown.
The Old
The New
One thing that has not changed are the locals who still visit today
Thanks, chef Jodi
