Food intake in years gone by was quite an easy accomplishment. When parents had plenty of time, food was not so genetically modified, more land was available to produce your own garden goods and we were not bombarded by fast food companies.
These days it feels like life is one big rush and all these ready-made food items seem to be a great choice for time-poor families, but in reality they are slowly stealing away our love of fresh food and spending time together learning family recipes, not to mention important nutrients . Our yards are getting smaller which makes it harder to grow our own produce which in turn leads us to forget how good your own fresh food really tastes.
I have had a medical issue with one of my family members over the past year and after meeting with specialists and much research, a varied diet of fresh herbs, fruits, vegetables, meats, nuts, seeds and seafood seems to be the recurring comment. Even though nothing could have prevented the illness medicine and diet has gone a long way to assisting in the recovery.
In the college cafe we always try to provide a complete diet by offering varied meals and a large selection on our buffet.
Here are some of our past meals to keep parents up to speed with what we are doing, and of course if you would like to come in one day and see for yourself by all means do so.
Beef lasagna w/ tomato and basil salad
Pulled Mexican chicken w/ rice, greek yoghurt, diced cucumber and cilantro
Pumpkin soup w/ toasted seed crumb and a wholemeal roll
Fish and vegetable pie w/ mashed potato (seafood is not a favourite but we like to try once a fortnight)
Moroccan chicken w/ couscous
Pork chop w/ roasted sweet potato and apple sauce
Steak sandwich w/ tasty cheese and all the salad trimmings
Lamb tagine w/ chickpeas and vegetables
Beef wonton, noodle soup w/ bok choy
